Cook/Supervisor
Description of Duties
Luther College at the University of Regina is seeking a Cook/Supervisor for a full-time term position (40 hours/week). Reporting to the Manager of Culinary Operations, the Cook/Supervisor is responsible for performing duties pertaining to the preparation and serving of all food items on the daily menu as well as the supervision of other staff employed in the production and serving area in the absence of the Manager of Culinary Operations.
Responsibilities:
Responsibilities may include, but are not limited to:
• Following a menu, preparation and presentation of food to be served in the cafeteria, at catered events, and for other functions as required, typically for between 150-500 people at once;
• Ability to follow a baking recipe and prepare an assortment of desserts as required, typically for between 150-500 people at once;
• Is responsible for ensuring over all sanitation, food handling and storage standards established by the Federal and Provincial Health Departments as well as Luther College are adhered to and met;
• Ensure proper internal food temperatures with a calibrated thermometer while cooking and maintain while holding and serving;
• Keeping food properly dated and rotated to maintain safety and freshness standards at all times;
• Clean and maintain cooking equipment;
• Check menu in advance to ensure there are sufficient food supplies in stock and participate in production planning meetings with the Manager of Culinary Operations as necessary;
• Adhere to and maintain a respectful workplace as per the Luther College Respectful University Policy and Procedures;
• Complete other tasks as assigned by the Manager of Culinary Operations.
Shift Supervisor Responsibilities may include, but are not limited to:
• Placing orders for food supplies as required in accordance with proper ordering procedure;
• Scheduling;
• Manage sick calls when on duty, including weekends;
• Provide a hands-on leadership role in the kitchen
• Assist in developing and improving existing kitchen processes and procedures
• Assist with managing the increased workload in the kitchen
• Elevate the delivery of catering services
• Coach and educate staff on food preparation and cooking
• Provide support, assistance and coverage for the Manager of Culinary Operations
• Strengthen existing team with improved planning, revenue generation, and purchasing
• Enhance student and guest satisfaction with improved preparation and cooking methods
• Completing incident report forms regarding conflicts, late shift arrivals, and incompletion of assigned duties among staff members in the absence of the Manager of Culinary Operations;
• Leading by example and imparting the importance of a good work ethic and cleanliness of self and workplace to staff;
Qualifications:
• Graduation from grade 12 and completion of recognized cooking course. Completion of Red Seal Journeyperson’s Certificate would be considered an asset. An equivalent combination of education and at least five years of experience as a supervisory Cook in a comparable environment may also be considered;
• A demonstrated commitment to employee health and safety practices and procedures is required and knowledge of cleaning materials and chemicals used in the College and the Workplace Hazardous Materials Information System (WHMIS);
• Knowledge of supervisory practices, excellent interpersonal skills and the ability to maintain an effective working relationship with other employees, faculty and students;
• Experience operating equipment such as dishwashers, mixing machines, ovens, toasters and similar equipment typically found in a cafeteria environment is essential;
• Demonstrated experience in checking stock and supplies, placing food orders, reconciling them when they are delivered;
• Being organized, friendly, patient, reliable and hardworking;
• Service oriented perspective with internal and external clients;
• A proven ability to work both independently and as part of a team is required;
• Physical fitness including the ability to periodically lift moderately heavy loads in a safe manner;
• As this position may interact with students, a criminal record check will be required;
• Affinity with the goals of Luther College and the small college environment in which flexibility, warmth, and cordiality are necessary and valued.
Supervision
At times, the position includes supervision of other food service employees.
Environment
This position is routinely in contact with students, faculty, staff, and senior administration as well as conference or catering guests. External contacts may include delivery personnel, inspectors from regulatory bodies, and the general public.
Work Hours
This is a full-time position working 40 hours per week. The position requires shift work including a combination of evening and weekend hours. Working hours can be irregular and extended hours will be required from time to time.
Salary and Benefits
The salary range for this position is $22.57 to $27.10 per hour, plus a supervisory stipend when acting as a shift supervisor.
